Stuffed Onion Potatoes


Ingredients:
  • 4  large
  • 2  large
  • 1  cup  chopped
  • 1/2  cup  chopped
  • 1/2  cup  cheddar
  • 1/4  stick
Directions:
Core out potatoes leaving skin unharmed.
Take inner potatoes and chop for boiling, them boil potatoes till soft and ready for whipping.
While waiting for potatoes to boil, bake skins till crisp, trying not to harm the skins. (300 degrees)
Whip potatoes as you would mashed potatoes,mix onions and mushrooms into whipped potatoes, adding melted butter and salt and pepper as desired.
Then stuff baked potato skins with you whipped potatoes and bake for 20 minutes at 350 degrees.
5 minutes before removing from oven, sprinkle cheese and green onions on top.
